Blueberry Cheesecake

I don't have time to actually 'bake' so I made a blueberry cheesecake which doesn't require baking in the oven, just chilling in the fridge. If you want the recipe, here it is.





Blueberry Cheesecake

Ingredients:
for the crust
1 1/4 c crushed graham
2 T sugar
1/3 c margarine
1 tsp lemon rind

for the filling
1 pkg cream cheese, softened
1/4 c sugar
1 tsp unflavored gelatin
3 T fresh milk
1 c all purpose cream
1 c blueberry in syrup

Procedure:
For crust:
Mix crumbs with sugar, margarine and lemon rind.
Press on a 9 inch pi plate or removable bottom pan. Chill.

For the filling:
Beat cream cheese and sugar until light and well blended.
Dissolve unflavored gelatin in milk over low heat and add to cream cheese while still hot.
Continue beating to blend well.
In a separate bowl, whip all purpose cream until stiff and fold into cream cheese mixture.
Pour into crumb.
Top with blueberry syrup. Chill for 4-6 hours.

So there you have it. It's easy and tasty LOL!

I Love Pizza!

Yup, I admit. I'm a foodie, I love pizza and pasta. Couple of nights we would have pizza for dinner. Just a simple pizza because not all of the ingredients I like when I order pizza from a pizza parlor are not commercially available here (sigh) The same with other (important) baking ingredients. So I just settle with pineapple chunks, ground beef, button mushroom (sliced thinly), chopped ham and salami, red bell pepper cheese and putting lots of red onions and a little bit of pepper. I wish that one day I could visit Italy for real, where pastas and pizzas are :)


Graham Cake

Finally, I was able to make my husband his request: Graham Cake. My first experience in making graham cake was with my sweet dear cousin, she's the one who taught me. And now, after several years, I made my very own (without the help of anyone but the internet)! It was a great experience of trial and error. The recipe was actually very simple, but for a first timer like me, it's kind of 'how-was-this-made' thinking (",)

Graham Cake (Refrigerator Cake as my husband calls it)
2 packs Graham Cracker
1 can condense milk
2 packs all purpose cream
3 Large sized mangoes or 1 medium can of fruit cocktail
1. place a layer of graham cracker at the bottom of the container.
2. mix condense milk and all purpose cream together and place a layer on top of the
    cracker, spread evenly.
3. place fruit on top of the cream.
4. cover with graham cracker and repeat the procedure until container is full.
5. finish it with crushed graham and chill.

It's now up to you to garnish the top with cream or fruits. Very easy isn't it? I hope to make some more for Christmas.

Cinnamon Cookies with Royal Icing

I was googling (checking on Google) a recipe of royal icing when I stumbled upon two websites about food and lots of food. You can check Betty Crocker here and the other one is from Blog ni Ako here. They fantastically shared their secret recipes for royal icing which I was able to try last Friday (yeah, sorry this post was kinda late). Here's my trial version:
Here's the recipe, again this is just half of the original.

Royal Icing
Ingredients
2 cups confectioner sugar
1 1/2 T meringue powder
3 T water
1/2 T almond extract
food coloring

Procedure
1. Mix confectioner sugar, meringue powder,
   water and almond extract for 5 minutes.
2. Add water a little at a time until you get the consistency you want.
3. Tint icing with your desired color.

However, I would not suggest almond extract because it actually smells like St Yves product or somewhat like a foot massage cream. Instead I would suggest vanilla extract. So there you go, my first cookie with icing. It's not perfect but my husband likes it (",)  I still have 13 days before Christmas (",)

Cinnamon Cookies

So this is my first time after 6 years, to bake cookies.  But I actually made half from the original recipe just to be sure that I won't be wasting a huge amount of ingredients in case I won't succeed :D This is just a plain cinnamon cookie recipe, no icing, no choco chips. I was actually a bit hesitant to bake but when I was able to taste it, I think it's kind of good (laugh). I'll wait for my husband to taste it and give his own judgment :D  By the way, here's the recipe: 






Plain Cinnamon Cookies
Ingredients:
 2 1/2 cups APF
3/4 cups butter, softened
2 eggs
3/4 cups white sugar
1/8 cup light brown sugar
1 tsp vanilla
1 tsp baking powder
2 tsp cinnamon powder
1/2 tsp iodized salt

Procedure:
1. Heat oven toaster for 10 minutes or 350F.  In a large bowl mix in sugar, butter, 
    cinnamon  powder, salt and vanilla.
2. Beat the eggs, stir and blend well.
3. Mix flour and baking soda then chill for an hour.
4. On a floured surface, roll the dough and cut (If you don't have cookie cutters, you can 
    use anything that can help you cut the dough like a bottle or a small cup).
5. Bake for 10 minutes or until lightly brown.

This is what I wanted to give my friends and family on Christmas. Made with love and less costly. Tomorrow I'll be baking some more and I'll put some decorations (icing).
